Kauzio · Menu Engineering
Know which dishes make money and which are costing you.
Kauzio applies the classic menu engineering matrix to your real sales data: Stars (high profit, high popularity), Plowhorses (popular but low margin), Puzzles (high margin but underordered), and Dogs (remove or reprice). Updated daily from your POS data.
What you get
Everything you need.
Nothing you don't.
Stars, Plowhorses, Puzzles, Dogs
Every item on your menu is classified into one of four quadrants based on its profit contribution and order frequency relative to the rest of the menu.
Profit per item and per cover
See the absolute profit generated by each item and the profit per cover it contributes. The numbers driving each classification are fully visible.
Margin percentage by item
Where cost-of-goods data is connected, Kauzio shows the gross margin percentage per item. High-volume, low-margin items are immediately visible.
Daily update from POS
Menu engineering is recomputed daily from your live POS data. A new promotional item moves from Puzzle to Star as volume builds — you see it happen.
Common uses
What operators use it for
- Identify Puzzles — high-margin items that need better placement or promotion
- Decide which Dogs to remove or reprice before the next menu print
- Set promotional targets for Plowhorses to improve their margin contribution
- Build a case for a price increase on Stars where demand is inelastic
Questions
Frequently asked
Does this work without cost-of-goods data?
Yes. Without COGS data, Kauzio classifies by revenue and popularity. With COGS data, it classifies by profit and popularity. The more data you connect, the sharper the analysis.
Is this only for restaurants?
The menu engineering matrix was designed for food and beverage but Kauzio applies it to any product range with revenue and sales volume data.
How do I act on a menu engineering insight?
From any item in the matrix, you can open a Kauzio decision directly — for example, a repricing decision for a Plow-horse. The decision inherits the item context.
